Lemon Bars Recipe: Easy, Best, and Perfectly Zesty

These lemon bars are an easy (EASY CLASSIC BUTTER CAKE) and best balance of zesty lemon flavor and a crumbly, slightly salty bottom layer. The fresh lemon aroma while baking brings a sense of calm and refreshment, soothing the mind and body.

Note

For a firmer bottom layer, bake a little longer.

To keep the bottom flaky, store the bars in the fridge to avoid moisture.

When zesting, make sure to only grate the outer layer of the lemon peel to keep it sweet and fresh (EGGLESS MOLTEN LAVA CAKE).

Lemon Bars Recipe

Ingredients
Bottom Layer

1/2 cup softened salted butter

1/4 cup sugar

1 cup all-purpose flour


Top Lemony Layer

4 eggs (room temperature)

1 1/2 cups sugar

1/4 cup all-purpose flour

Juice of 2 lemons

1/2 tsp lemon zest

Method

Bottom Layer

Mix the butter, sugar, and flour until smooth.

Press into a greased pan and bake at 160°C (320°F) for 10 minutes.

 

Top Lemony Layer

Sift flour and mix with sugar. Beat eggs and mix with lemon juice and zest.

Combine both mixtures and pour over the baked bottom.

Bake for another 30 minutes. Let cool and cut into squares.

Optional: Dust with icing sugar for extra sweetness.
