Hong Kong-Style Wonton Noodle Soup: Prawn, Chicken & Pork Wanton

Why not make Hong Kong Wonton Noodle Soup in your Malaysian kitchen? Who says you can't? Not me - I’ve already shown you can! Here’s a little confession: I’ve never actually been to Hong Kong (SINGAPORE LAKSA MS. NAVA'S VERSION). But isn’t it refreshing to hear someone like Ms. Nava keeping it real in a world full of fakes, especially on social media?

I’ve certainly enjoyed my fair share of Hong Kong-style dishes right here in Malaysia. From devouring Hong Kong Wonton Noodle Soups multiple times to savoring both Prawn and Pork Chee Cheong Fun from local coffee shop stalls, it’s clear that you don’t need to travel to Hong Kong to enjoy authentic flavors (SARAWAK LAKSA CREATIVE FLAIR).


Sure, my chili dip might not be the traditional one served with Hong Kong Wonton Noodle Soup. But does it really matter? And guess what? I’ve also made Pork Hong Kong Fried Wontons, a popular choice for both Hong Kong and Malaysian Chinese dim sum, as well as Chicken Wontons with kailan. Interested in the recipes? Absolutely - Ms. Nava loves sharing her culinary secrets. But first, let’s dive into the Hong Kong Wonton Noodle Soup.

One important note: you don’t need to be a professional chef to wrap your wontons. It doesn’t have to look perfect. Cooking at home is about enjoyment, not achieving restaurant-level perfection. As long as you manage to seal the filling inside, you’ve done a great job - I’m not the best at it either. 



Hong Kong Wonton Noodle Soup
Ingredients
For Prawn Broth
1 cup prawn heads and shells (Recipe at CANTONESE YEE MEE)
Water as needed

Method
Simmer or fry prawn heads and shells in a little water until crispy.
Add more water and simmer over low heat to extract the broth.
Season with salt.


For Chili Dip
Ingredients
2 green chilies, sliced
3 bird’s eye/red chilies, sliced
1 tbsp black vinegar
1 tsp sugar
2 tbsp dark soy sauce

Method
Blanch chilies in hot water for 1 minute.
Drain and mix with the remaining ingredients. 


For Wonton Dumplings
Ingredients
8 store-bought wonton sheets/skin
7 medium-sized prawns (peeled, deveined, and finely chopped)
1/2 tsp corn flour
1/2 tbsp corn flour (for dusting)
1 stalk spring onion, thinly sliced
1 tsp light soy sauce
A few drops of sesame oil
Salt and pepper to taste

Method
Mix all ingredients except the wonton sheets.
Place a small amount of filling in the center of each sheet and wrap it up.
If the wrapper doesn’t stick, dip your finger in water to seal.
Dust with the surface with corn flour to prevent wanton from sticking on the surface. 



For Assembling
Ingredients
Blanched wonton noodles
Sliced kai lan (Chinese kale)
Sliced spring onion

Putting It Together
Season the simmering broth with salt.
Place blanched noodles in a bowl.
Blanch kai lan in the broth and place on top of the noodles.
Gently drop dumplings into the simmering broth.
Pour the broth over the noodles and dumplings.
Top with spring onion.
Serve with the chili dip.


Fried Pork Wontons
Ingredients
For Pork Filling
½ kg minced pork
1 tsp corn flour 
1/2 tbsp corn flour (for dusting)
1 stalk spring onion, thinly sliced
½ inch chopped ginger
1 tsp light soy sauce
A few drops of sesame oil
Salt and pepper to taste

Other Ingredients
10 store bought wanton sheets/skin
Oil for frying

Method
Prepare as for the dumplings above.
Heat oil and fry dumplings until golden brown.
Serve with chili sauce.



Wanton Chicken Kai Lan Soup
Method
Follow the Hong Kong Wonton Noodle Soup recipe, but use chicken bones instead of prawn shells for the broth.
For dumplings, use minced chicken in place of prawns or pork.

Chill Garlic Soy Dip Option
Sliced chilies (red, bird’s eye, green, or a mix)
Chopped garlic
Lime juice
Light soy sauce

Mix all ingredients together and pair with any of the wonton dishes.
