Easiest Egg Fried Rice Recipe with Few Ingredients

(Updated Version)

Growing up in a family with modest means, I remember how my mum put her heart into every meal she made for us. Eggs were a rare treat—hard-boiled and halved to share or stretched across scrambled eggs for the five of us. Yet, nothing could beat her simple, three-ingredient egg fried rice made with chopped garlic, eggs, and day-old rice. It's a classic that I still cherish today. (EASIEST MALAYSIAN VEGETARIAN NASI LEMAK). The memory of all of us gathered around, enjoying this humble dish, remains close to my heart. Thank you, Mum, who’s now watching from above. I love you forever.

Now, to the recipe. I’ll also share a few easy ways to elevate this fried rice with ingredients you may already have on hand. Check your fridge and pantry, and see if there’s anything you’d like to add to this easiest egg fried rice recipe. And remember, some of the best meals come from using what’s left in the kitchen (5 EASY VEGETARIAN RECIPES).

Easiest Egg Fried Rice

This recipe doesn’t call for exact measurements, as it’s all about adjusting to your taste. I often add more eggs because I enjoy the richness they bring to the dish.

Ingredients

Day-old cooked white rice

Eggs

Chopped garlic

Oil

Salt and pepper to taste

To Make

Sauté the garlic in heated oil.

Add the rice, then crack eggs over it.

Season with salt and pepper, and stir-fry quickly over high heat.

Dish out.

Variations

Add sliced spring onions or scallions for extra aroma.

Toss in some frozen peas if you have them.

For a “clear-out-the-fridge” version, try fish balls, sliced fish cakes, or shredded cabbage.
