By 7:00 am (BETONG: WEEKEND TRIP OF DISCOVERIES), freshly showered, I headed down to the lobby, ready for the day ahead. Joined by a friendly couple, we ventured out in search of breakfast. Betong was bustling with coffee shops, many reminiscent of those in Malaysia, along with roadside stalls and hawker carts offering local delights. We finally settled on a coffee shop with a Thai signboard, and as we tucked into crispy Char Kway (Chinese Crullers) and fried dough, washed down with a warm cup of coffee, it felt like the perfect start (ONE-DAY DUBAI ADVENTURE) - simple and satisfying.

Chinese Steamed Fish with Ginger and Scallions

Its not the conventional style Chinese steamed fish, its actually elevated to another level or higher up style (TAMARIND/ASAM FRIED FISH). But the cooking technic is still simplicity, as always, steaming fish is not anything complicated and steaming is actually one of the best Zen style style for healthiness. Even making the sauce is also uncomplicated, just that it requires other ingredients compared to the conventional Chinese steamed fish ginger and scallions. 


We in Malaysia actually are more accustomed to calling scallions as spring onion, which is grown in Nava’s Zen. The sauce is a revelation of mouth popping and mouth watering super deliciousness and one which is made from our usual kitchen staples, and pantry and fridge friendly ingredients (CANNED SARDINE RECIPES). All in in, Ms. Nava’s Chinese Steamed Fish with the spicy, tangy and aromatic sauce is a treasure to the mouth. Constant phone use, especially late at night, is a major sleep disruptor. Social media and WhatsApp chats keep your mind buzzing, while the blue light from your screen interferes with your natural sleep cycle. Disconnecting by 9:30 p.m. can make a world of difference. Speaking about pandan leaves, also known as screwpine leaves, already makes me feel enlivened. It's as though I can instantly catch a whiff of their amazing aroma. The beauty of pandan leaves lies in their delightful scent - sweet, grassy, and slightly nutty, with a hint of coconut. I consider pandan leaves to be the Malaysian and Asian equivalent of vanilla beans, especially in their green form.

 

Cooking Uses of Pandan Leaves

This fragrant essence uplifts various dishes, from our beloved Malaysian desserts to savory meals. One notable savory dish is Nasi Lemak, where pandan leaves can be added during cooking or blended to infuse both aroma and a natural green hue (EASIEST VEGETARIAN NASI LEMAK). In Malaysian desserts, pandan leaves are a customary and essential ingredient, enhancing flavors and providing a beautiful natural color (KUIH LOMPANG/KUIH KASWI).

I’ve been growing pandan leaves for quite some time, and in Malaysia, they are relatively easy to cultivate. While some may struggle, the best method is to plant them directly in the ground, where they can flourish in clusters. However, growing them in pots is also an option; just be cautious not to overwater, as this can lead to root rot. They can thrive without fertilizers as well. Overall, pandan leaves are resilient and adaptable, thriving in warm, humid environments and requiring minimal care, making them an ideal choice for anyone who wants to grow them.

 

Natural Insect Repellent

Did you know that pandan leaves also serve as a natural insect repellent, especially against cockroaches? To use them effectively, simply wash the leaves, tie them in a bundle, and place them in dark areas where cockroaches tend to hide, such as cupboards and drawers. This natural remedy is a fantastic alternative to chemical repellents, allowing you to maintain a healthier home environment.

For me, pandan leaves are not just for cooking or repelling insects; they also bring a touch of nature indoors. After washing them thoroughly, I place them in vases or empty bottles filled with water around the house, including the kitchen. Just make sure to add some mosquito repellent to the water. Later, you can transplant these leaves into pots or into the ground.

Moreover, pandan leaves are often used in traditional rituals and cultural practices across various Southeast Asian communities. Indian Desserts: How to Make Payasam

Don’t you agree that a complete Indian meal, whether it’s a vegetarian (COCONUT CREAMED SPINACH) or non-vegetarian thali, is not truly complete without a serving of payasam? For me, it's an Indian dessert I look forward to during festive seasons, weddings, and when dining out (MUTTON RENDANG RECIPES).. Every few months, I make payasam myself when I long for the comforting feeling of a wholesome home-cooked meal. 


Payasam is my all-time favorite, especially when it's generously loaded with ghee. I must also attest that the best versions I've had come from Kerala, made with pure cow’s milk and indulgently sweetened with sugar, ghee, and nuts. While I've enjoyed payasam in thali sets across other regions of India, my top choice remains Kerala payasam (KOCHI, KERALA: THE KALEIDOSCOPE OF EXPERIENCES).

One of the simplest Malaysian desserts, specifically Malay desserts, is undoubtedly Sagu Pudding with Palm Sugar or Sagu Gula Melaka. This delightful treat is a favorite among Malaysians, including myself (WAJIK PULUT: GLUTINOUS RICE CAKE), and is incredibly easy to make - even for those who have never prepared Malay desserts before.

Sagu Gula Melaka consists of cooked, translucent sagu drenched in rich coconut milk and topped with palm sugar syrup. Easiest Mutton Curry Recipes: Chettinad, Chukka & Biryani

Are we ready for two mouthwatering South Indian-style mutton curries? As a bonus, I’m also adding the easiest vegetable biryani (VEGETABLE PULAO RICE: ZEN TASTE & COLOR THERAPY), because what better pairing exists for mutton curries than a delicious biryani? These curries are not just basic; they’re simple yet packed with flavor (EASIEST MUTTON CURRY WITH TURMERIC CABBAGE & CUMIN RICE).

Before we dive in, here’s an important tip: when serving mutton curries to guests, ensure that the meat is tender. Tough meat can be off-putting and may lead to guests struggling to chew, or worse, dealing with meat stuck between their teeth. So, why not show you care by pressure cooking the mutton before making the curry? I’ve had to tuck into mutton curries where the meat was so tough. And don’t waste your time telling them, because “truth hurts, and truths are not wanted.” Also, those who cooked the mutton curries often have no consideration for others, nor do they test the tenderness while cooking.

On my way to an eatery I’d been eager to try on Jalan Kebun, I stumbled upon Kodai Kueh Shah Alam by Aboy Eisha, located at Lorong Ikhsan. It’s just a quick 10-minute drive from Nava’s Zen in Kemuning Greenville. I found it intriguing that it’s called kodai instead of the more common kedai, which means "shop" in English. Ah! Just one of those quirks I can't comment on. Never mind; it’s not a big deal anyway.

As I approached this unassuming roadside shop, I noticed a growing crowd. Curiosity piqued - what was it about this place that was drawing so many people in? The closer I got, the more intrigued I became.

Betong, Thailand: Weekend Trip of Discoveries

Betong? I wondered, Where is Betong? What’s there to see in Betong? These were my questions when a couple, a husband and wife, invited me to join them on a trip there. It didn’t really matter where Betong was or what it offered, as I'm always ready to explore new places (BERGEN SIGHTSEEING & DENMARK-NORWAY REFLECTIONS). I also love road trips - the free and easy, no-pressure kind where you go with the flow and discover something new. I soon found out that Betong is a town in Southern Thailand, near the Malaysian border.


With bags packed for a weekend trip, we set off on Friday morning for a three-day adventure. By 9:00 AM, we hit the road, and the drive through Pengkalan Hulu, Perak, on narrow, winding roads was breathtaking. Towering trees and untouched virgin jungle lined both sides of the road, offering us a scenic, mind-soothing view until we reached the border.

I’m all about that tofu life! What about you? If you're a tofu enthusiast like me, you're in for a treat with my recipes, starting with the crowd-favorite Tofu Manchurian. Living just 10 minutes from Jalan Kebun via Kemuning Greenville, I’ve yet to explore the eateries in Jalan Kebun. However, being a true lover of Malay cuisine, I’ve already indulged in every Malay eatery within Kemuning Greenville, where Nava's Zen is located as well. This time, for a casual lunch with my dining companion, we decided to venture into Jalan Kebun. Though I initially had another spot in mind, my lunch partner suggested Warung Mak Dara Corner (Kampung Jln Kebun), and we arrived around 11:30 am on a Sunday.

Parking was a breeze - being both Sunday and an early lunch hour. By the time we arrived, a few patrons were already enjoying their meals. While they offer breakfast and noodle dishes (likely served later in the day), the main attraction for lunch is Nasi Campur.

When it’s festive season among Indians in Malaysia, a mutton dish is always a must. Don’t you agree? I certainly do! Mutton dishes, especially during Deepavali, are something I eagerly anticipate. What I love most is that mutton dishes can be made a day ahead, allowing the spices and flavors to really soak into the meat. When reheated, the gravy thickens, transforming into a rich, vibrant sauce that coats tender mutton pieces in all their glory (AUTHENTIC INDIAN MASALA CHICKEN CURRIES).

Ben & Jerry’s Chocolatey Love A-Fair: A Sweet Treat

It all started with a craving for a sugar fix that I couldn’t shake off. While wandering around Gamuda Walk, I found myself stepping into Village Grocer, hoping to find something to satisfy my sweet tooth. Among the variety of desserts and sweet treats, I found myself irresistibly drawn to the ice cream section, where Ben & Jerry’s Chocolatey Love A-Fair caught my eye

Am I an avid fan of cocoa-based treats? Generally, I prefer dark chocolate, enjoying it in moderation when my need for a sweet indulgence or a guilty pleasure strikes. My previous encounter with Ben & Jerry’s ice cream was years ago at their now-closed Sunway Pyramid outlet, so this felt like a nostalgic choice.

DUBAI, UAE: Tourist Discovery

What started as an unexpected twist turned into a thrilling adventure I didn’t see coming. After boarding my flight in Turkey (MUST-VISIT SIGHTS IN TURKEY), the plane stayed grounded for nearly an hour due to “technical hiccups.” Two hours later, we took off, but by the time we landed in Dubai, I had missed my connecting flight to KLIA. With nothing to do but wait for the next flight the following day, the airline arranged a one-day stay at the Copthorne Hotel Dubai, including meals.

There’s something almost magical about a Chinese soup infused with herbs, veggies, and ladled over tender noodles. The flavors blend together in a sensational way. While I’m not strictly vegetarian, I enjoy both meat (like my Chinese Herbal Pork Soup) and meatless meals. Nothing beats the depth of flavor from a homemade vegetable stock, which is key to a truly nourishing bowl.

Foot Creams Review: Dry Skin & Cracked Heels

How are your feet doing? Mine have already become rough, tough, and full of character, with lines and wrinkles forming a natural pattern. Honestly, I don't mind the wrinkling - people rarely notice my feet. Well, maybe they do when I’m conducting yoga sessions, but even then, I embrace the lines and wrinkles. What I do struggle with, though, is the rough, dry skin. At times, I can feel the skin flaking under my fingers. Being an urban gardener and taking care of household chores that involve frequent contact with water makes this almost inevitable.

The real concern for me is if the dry, flaky skin will start peeling and expose raw skin underneath  -  thankfully, that hasn’t happened yet. For some, dry feet can lead to cracked heels, which can be quite painful. Once the cracks deepen, they can bleed, making every step excruciating. Luckily, this hasn’t been my issue, but I’m always mindful of it.
