Cempedak Goreng Rangup: Crispy Delight with Black Sesame

Aha! We Malaysians are incredibly familiar with cempedak, and if you’re in Indonesia or Thailand, I’m sure you know exactly which fruit Ms. Nava is referring to! Cempedak is a tropical fruit native to Southeast Asia, closely related to jackfruit but smaller in size. Its outer skin is rough and greenish-brown, while the flesh inside is soft, yellow, and sweet with a distinctive aroma. The texture is creamy, and the flavor is a blend of banana, mango, and durian, making it truly unique.
Cempedak is often eaten fresh or fried in batter as the beloved "cempedak goreng", which is precisely what Ms. Nava is showcasing today in her segment of Zen Cuisine. But, of course, you know Ms. Nava loves adding her twist to everything (KUIH LOMPANG & KUIH KASWI) in her Zen Cuisine, right? Well, you're absolutely right! There’s a special twist to this cempedak goreng  -  an extra ingredient that adds a new dimension. It’s black sesame seeds! These little seeds add a Zen crunch, enhance its visual appeal, and bring a unique, Zen-like touch to this traditional snack (EFFORTLESS MALAY DESSERTS).


Ingredients

12 cempedak pulps

1/2 cup all-purpose flour

1/3 cup corn flour

1/3 cup rice flour

2 tsp black sesame seeds

A pinch of baking powder

A pinch of salt

Water (as needed)

Oil (as needed for frying)

Method

In a mixing bowl, combine all-purpose flour, corn flour, rice flour, baking powder, and salt.

Gradually add water, whisking until you get a smooth batter.

Stir in the black sesame seeds.


Add the cempedak pulps to the batter and gently mix.

Heat oil in a pan, then fry each pulp until golden brown.

Drain excess oil, and crunch in.
