Creamy Buttery Mashed Potatoes - Italian Recipe

Creamy buttery Italian mashed potatoes served in a shallow round plate.
Nothing beats the luscious, super smooth texture of mashed potatoes - especially when you’re generous with milk and butter. This is an Italian-style recipe. Surprised? I picked up the technique during my time in Italy, tasting and coaxing hints from restaurant owners who were reluctant to share their secrets but offered enough clues to get me started (THINGS TO DO IN LAKE COMO, LUGANO & MILAN).

Italian-style creamy buttery mashed potatoes are cooked on the stove and require tasting as you go, helping you decide if more milk or butter is needed. Why use cold milk and butter? It helps control starch release, prevents gumminess, and ensures a smooth, creamy texture without overpowering the potatoes’ natural flavor.

Ingredients
3 medium-sized potatoes - simmered, peeled, and mashed
1 cup cold milk
¼ bar cold unsalted butter - cut into pieces
Salt and pepper  - to taste

Lined up for mashed potatoes: 3 mashed potatoes, 1 cup milk, 1/4 bar butter, salt, and pepper.

Method

Heat the milk gently.

Add the mashed potatoes, keeping the flame low.

Stir continuously, adding 1 or 2 pieces of butter at a time.

Keep stirring while incorporating the remaining butter.
Season with salt and pepper as you go.

Heating 1 cup of milk in a pan on the stove.
