Easy Veggie Fried Rice: Malaysian Style

A scoop of spicy fried rice with chili paste, potatoes, green peas, spring onion, and shallots.
No, not your ordinary fried rice. It is the easy and ultimate Malaysian Fried Rice. Why not ordinary? Because potatoes are one of the ingredients, which I believe is not a usual for fried rice? Correct me if I am wrong?

Why Malaysian Fried Rice, must be your next question? Because dried chilli paste, which is a popular ingredient for our Malaysian especially sambal dishes, is the other ingredient. Considering also, how much Malaysians love spiciness in food (QUICK TOM YUM FRIED RICE).  Let alone, we Malaysians love our rice. Anytime meal of the day.  Pretty much it sums up, why this Malaysian Ms, Nava, made a Malaysian version fried rice.

Your need just 8 ingredients (EASIEST EGG FRIED RICE), and these are the common ingredients, which you probably have stocked up in your pantry and fridge. Regardless, our Malaysian style fried rice will captivate your tastebuds, yearning for more, with its simplicity, yet packs a punch.  All the better, grow spring onions as they do come in handy for such a fried rice.

 

Ingredients (adjust according to quantity needed)

2 cups cooked white rice

3 shallots - chopped

2 medium potatoes - peeled, sliced into small pieces & mix with some turmeric powder & salt. 

Dried red chili paste - to taste

1 handful frozen green peas

Some spring onions - thinly sliced

3 tbsp oil

Salt to taste

Cooked white rice, turmeric-tossed potato slices, green peas, spring onions, chili paste, oil, shallots & salt for fried rice.

Method

Heat oil and fry potatoes until they form a light crispy outer layer.

Remove and set aside.

In the same oil, sauté shallots.

Add dried chili paste and cook until the oil separates.

Add rice and stir to combine.

Add fried potatoes, peas, spring onion and salt.

Stir to combine all ingredients.

Dish out and serve.
