For the Balado
Sauce
3 shallots,
sliced
A handful of
dried chilies (soaked & drained)
2 tomatoes,
sliced
5 garlic
cloves, chopped
1-inch roasted
belacan/shrimp paste (optional)
(Blend these ingredients. Add a little
water if needed.)
Other
Ingredients
4 hard-boiled
eggs
2 bay leaves
Some kaffir
lime leaves
Palm sugar
Salt
¼ cup oil

Heat oil and fry the eggs until crispy on the outside.
Set aside.
Reduce the oil, then add the blended Balado sauce.
Pour a little water and cook until the oil splits.
Add palm sugar, salt, and bay leaves.
Cook until the sauce thickens.
