Spicy Eggs Recipe: Resepi Telur Balado Indonesia

Eggs again? Why not! This time, let’s spice things up with Telur Balado, an Indonesian-style spicy egg dish. Think of it as a sambal-infused delight - bold, fiery, and packed with flavor (EGG SAMBAL RECIPE). But of course, Ms. Nava’s twist makes it even better.

Ingredients

For the Balado Sauce

3 shallots, sliced

A handful of dried chilies (soaked & drained)

2 tomatoes, sliced

5 garlic cloves, chopped

1-inch roasted belacan/shrimp paste (optional)
(Blend these ingredients. Add a  little water if needed.)

 

Other Ingredients

4 hard-boiled eggs

2 bay leaves

Some kaffir lime leaves

Palm sugar

Salt

¼ cup oil

Ingredients for spicy eggs - chlli based sauce, eggs, herbs, salt, and oil.
Method
Heat oil and fry the eggs until crispy on the outside.
Set aside.
Reduce the oil, then add the blended Balado sauce.
Pour a little water and cook until the oil splits.
Add palm sugar, salt, and bay leaves.
Cook until the sauce thickens.

Add the eggs and kaffir lime leaves.
Stir all together and dish out.
